Chocolate Box: Food Historian's Collection

 

This collection has been in the 'pipe-line' for a while and we are really excited that it is finally ready.

 

We have taken some of the most delicious flavours from medieval times through to the 18th century and incorporated them into soft-centred chocolates. Each chocolate is generous in size, so feel free to share…!

 

The flavours are:

 

Hypocras (Medieval): Hypocras is a warmed drink, usually made with wine, sugar and spices. We have adapted a medieval recipe, using a merlot wine infused with nutmeg, clove, fennel, cinnamon and ginger, incorporated with a dark chocolate ganache.

 

Trifle (Medieval): Based on Thomas Dawson’s 1585 recipe for whipped cream ‘Trifle’, we have combined the flavours of roses and ginger with a white chocolate and cream ganache.

 

Strawberry (Medieval): This is based upon a pottage recipe from a collection of 15th century cookery books with influences from other medieval strawberry recipes for tarts or pottages. Strawberries and spices have been included in a white chocolate ganache with a little Marsala dessert wine.

 

Syllabub (18th Century): Syllabubs originate during the 16th century, but have evolved by the 18th century into popular whipped cream desserts. We have combined a white chocolate cream ganache with some delicious sweet wine and lemon.

 

Gingerbread (18th century): Gingerbread recipes have varied enormously through time. This milk chocolate ganache is infused with the same spice mice as our popular 18th century Cumberland recipe for gingerbread biscuits.

 

Chocolate Cream (18th Century): Hannah Glasse is one of the best known recipe book authors of the 18th century and this milk chocolate ganache recipe is based upon her recipe for Chocolate Cream, using a sweet dessert wine and rosemary to produce a rich flavour.

 

Please note that these chocolates are made with fresh cream and as such have a shelf-life of around 5 weeks from production.

    Trifle: Dark chocolate (minimum cocoa solid 54.5%) (cocoa mass, sugar, cocoa butter, emulsifier: SOYA lecithin, natural vanilla flavouring), white chocolate (minimum cocoa solid 28%) (sugar, cocoa butter, whole MILK powder, emulsifier: SOYA lecithin, natural vanilla flavouring), cream (MILK), glucose, butter (MILK), rose flavouring (emulsifier – polysorbate 80, rose extract (17%), geranium extract, rhodinol, geraniol, and palmarosa extract), ginger flavouring (emulsifier – polysorbate 80 and ginger extract (45%)), rose petal fragments: sugar, natural flowers, gum arabic, colouring E120-Aroma.

    Gingerbread: Dark chocolate (minimum cocoa solid 54.5%) (cocoa mass, sugar, cocoa butter, emulsifier: SOYA lecithin, natural vanilla flavouring), white chocolate (minimum cocoa solid 28%) (sugar, cocoa butter, whole MILK powder, emulsifier: SOYA lecithin, natural vanilla flavouring), cream (MILK), glucose, butter (MILK), ginger, mixed spices. Crystalised ginger, sugar, preservative: SULPHUR DIOXIDE.

    Syllabub: Dark chocolate (minimum cocoa solid 54.5%) (cocoa mass, sugar, cocoa butter, emulsifier: SOYA lecithin, natural vanilla flavouring), white chocolate (minimum cocoa solid 28%) (sugar, cocoa butter, whole MILK powder, emulsifier: SOYA lecithin, natural vanilla flavouring), cream (MILK), wine, glucose, butter (MILK), lemon flavouring (Lemon oil (60%) and emulsifier – polysorbate 80).     Chocolate Cream: Dark chocolate (minimum cocoa solid 54.5%) (cocoa mass, sugar, cocoa butter, emulsifier: SOYA lecithin, natural vanilla flavouring), milk chocolate (minimum cocoa solid 33.6%) sugar, cocoa butter, whole MILK powder, cocoa mass, emulsifier: SOYA lecithin, natural vanilla flavouring, cream (MILK), wine, glucose, butter (MILK), Cocoa nibs, Rosemary flavouring (emulsifier - polysorbate 80 & rosemary oil (40%)).

    Strawberry: Dark chocolate (minimum cocoa solid 54.5%) (cocoa mass, sugar, cocoa butter, emulsifier: SOYA lecithin, natural vanilla flavouring), white chocolate (minimum cocoa solid 28%) (sugar, cocoa butter, whole MILK powder, emulsifier: SOYA lecithin, natural vanilla flavouring), cream (MILK), wine, glucose, butter (MILK), strawberry, maltodextrin, pepper, ginger flavouring (emulsifier – polysorbate 80 and ginger extract (45%)), cinnamon flavouring (emulsifier – polysorbate 80 and cinnamon extract (30%)).
